How the grades work
SCDA inspects about 24,000 retail food establishments statewide. Under its risk-based system, each one is inspected once or four times a year, depending on the food it prepares and its compliance history, the department says. The inspector scores the visit and the establishment gets an A, B or C, under South Carolina Regulation 61-25.
